For Craft, as long as materials are combined and a physical item is the result then it can be included.
For Perform, if it can be performed it can be included.
For Profession it's tough to have a definition. Something along the lines of "if it involves the doing of a specific task but without the production of physical items then it can be included" . Though this definition seems lacking to me. Especially because of some more awkward crossovers, like Scribe since your carrying out a specific task but are creating a physical item as a result.

Craft (carpentry) (not woodworking)
Perform (epic poetry)
Perform (ballads)
Perform (limericks)
Perform (Sonnets)
Profession (herbalist)
Profession (sailor)
There are plenty of others too...
Craft (Armor) and Craft (weapon) are too broad. There are different ways of making various weapons and armors that are covered under other craft skills (like leatherworking, for example)...

As a side note, yeah, I know that there are already tons (probably hundreds) of automated character sheets out there, but I need to learn AJAX for my web design company, and this seemed like a fun way to do it, so that's the whole thinking behind this.
If anyone thinks of more suggestions, let me know!

Anyway, from the old Sword and Fist supplement, WotC listed Knowledge [War] as a skill, and I think there was a Craft [Seige Engine] I've seen somewhere.
Iron Kingdoms has a few steampunk geared Craft skills, like Mechanicka (probably better known as Clockwork in other settings), Small Arms (meaning guns) and Cannons.
In my own campaign, Profession [prostitute] is a skill possessed by men and women who live at the temple of the pleasure seeking cat goddess. It's probably a common skill in most other settings, too, but legality may vary...
And, uhm Raven... Whipping Boy?

unless you never use psionics you better add knowledge (psionic).
knowledge (economy) is an option.
proffesion (diplomat) could be replaced by the diplomacy skill.
perform (jokes) sound nice. perform (mime) sound cool. perform (theater player) is another option.
you can make many more:
proffesion (contractor)
proffesion (psychologist)
proffesion (manager)
proffesion (whitewasher)
proffesion (social worker)
proffesion (barber)
proffesion (tax colector)
proffesion (waiter)
proffesion (politician)
craft (shoemaker)
craft (tailor)
craft (goldsmyth)

Knowledge (anatomy)
Knowledge (medicine)
Knowledge (botony)
Knowledge (astrology)
Knowledge (mathematics)
Knowledge (physics)
Knowledge (alchemy) - not to replace Craft (alchemy) but to represent one's theoretical knowledge
Knowledge (economics)
By the way, a good source of Knowledge subskills would be any college course offering.

I am toying with a few other methods of storing skills and whatnot, so this thread may end up being a somewhat moot point. But no matter what method I choose, I'll definitely be using these suggestions in some sort of manner. Just have to figure out what that manner is.
